I am always fresh and so full of words in the morning. A piping hot cup of black coffee next to my laptop and the sound of my fingers breezing over the keyboard is generally how my husband wakes up on the weekends. It is certainly how I like to wake up, spreading my thoughts out onto a blank screen. I stumble out of bed to take the pup on his morning walk, throw some kibble in a bowl for him, and fumble with the coffee machine until it pours out the java. Then….I write. Is it eloquent and beautiful? Ehhhh, I would think not. It is basically word vomit that I call blog posts, and I LOVE it. Someone recently asked me what I write about on my blog. I blurted out “recipes” automatically. She nodded, as we had already gone over it was a food blog, still looking at me expectantly. So then I thought for a moment and said “whatever is on my mind”. It is the truth. Who would have thought a place I created for food has also become an open book on my life?
However, times like this evening, after work, I actually have issues finding the words to describe what is in my head. I blame it on a long work day and low caffeine levels. It makes me ponder what it must be like to have hardcore writer’s block. Can you imagine? What if you were a genius author and your own thoughts were trapped away from you? Inside of your own mind?! That would be too much internal conflict for me because I would be TICKED-and at myself at that. Sounds exhausting.
Today’s recipe goes hand in hand with my energy level this evening as these Cajun boiled peanuts can be made with no brain power whatsoever. Three ingredients tossed in a crock pot and you have a tasty snack in 8 or so hours. They are awesome for appetizers at barbecues or tailgates and you can serve them hot or cold based on preference. Spicy, salty and perfectly cooked, these boiled peanuts are too easy and inexpensive not to give a try. You can also just use salt if you don’t like or have cajun seasoning.

- 8 cups peanuts with shell
- 5-6 tbs Cajun seasoning
- 13 cups water
- Combine water and cajun seasoning in 6 qt crockpot, stir until cajun seasoning is as dissolved into the water as possible. Add peanuts. Allow to cook overnight or at least 8 hours on high. Taste a peanut and see if it is soft enough.
- Serve warm or cold.
