Today I share a recipe that is good because of it’s simple and fresh ingredients. You will need fresh bread and fresh tomatoes in order to taste the full flavor effect from this combination of foods. If you have a greener thumb than I, perhaps you have tomatoes in your garden. I tried to grow tomatoes last year and while the plant itself was large and lush, it never yielded any tomatoes….based on my research I believe the weather was too hot and I had it in a pot so the roots were not cool enough. I will try again next year…anyways….. As for the bread, I recommend finding your local bakery and grabbing a fresh baguette and then go make this recipe immediately.
I was quite surprised at how often this bread is served in Barcelona and Mallorca, the two places we visited on our trip. I was mainly astounded as it is absolutely delicious, yet I had never heard of it here in the United States. It is served for breakfast with coffee, or pretty much at any time you find it on the menu-which was a lot.. I particularly enjoyed it when Tortilla de Patatas was sandwiched in between, but that is another recipe for another time (coming soon).
Crunchy bread topped with fresh garlic and chunky tomato puree, drizzled with olive oil and a dash of salt and pepper. It is truly an amazing snack, appetizer, or if you are feeling Catalan-breakfast. My husband and I have been eating it at least once a week since we returned, and i don’t see us stopping anytime soon. It is too inexpensive and satisfying a dish to keep from making it. It is one of those meals that makes you really appreciate the simplicity of certain foods, and how fresh ingredients reign supreme over canned or other packaged foods. This is one I highly recommend! Plus, you get a small piece of Catalan culture, so why not? Right?

- 1 baguette
- 2 medium tomatoes
- 2 cloves garlic
- 2-4 tbs olive oil
- salt & pepper
- Slice baguette through the middle, sandwich style, then cut it in half.
- Toast in oven until mostly crunchy.
- While bread is toasting, puree tomatoes and garlic in food processor until chunky paste forms. Alternatively, you can also rub the tomatoes on a greater for the same effect. If you choose this method, you will want to mince your garlic separately and add it to the grated tomatoes.
- Once bread is toasted, generously spoon tomato puree onto crusty bread. Top with salt and pepper. Generously drizzle olive oil on top. Eat immediately.

That looks like something we’d gobble up around here… maybe not for breakfast though! I do have a weird habit of eating ramen noodles for breakfast though on occasion, but mostly I prefer sweet to savory in the a.m.
