Red, White, and Blue Waffles

Ingredients
  • Blueberry Compote:
  • 1¾ cup blueberries
  • 1 tbs agave
  • 1 tbs chia seeds
  • ¼ cup water
  • Strawberry Compote:
  • 2 cups strawberries
  • 2 tbs agave
  • 1 tbs chia seeds
  • ¼ cups + 2 tbs water
  • Coconut Whip:
  • About 1 cup CHILLED coconut cream (the top part of an unshaken can of full fat coconut whip)
  • ¼ cup sugar
  • 1 tsp vanilla extract
  • Waffles:
  • ¾ cup whole wheat pastry flour or oat flour (other flours would prob work too, let me know if you use a different type in the comments)
  • ¼ cup cane sugar
  • 1 tsp baking powder
  • 1 tbs ground flax
  • 1 tsp lemon zest
  • 1 tbs coconut oil
  • 1 tsp apple cider vinegar
  • ⅓ cup strawberry compote
  • ⅓ cup + 2 tbs dairy free milk (I used cashew milk)
Instructions
  1. Start by placing a small sauce pan on medium heat. Add 1 cup blueberries to food processor along with 1 tbs agave and blend until mostly smooth.
  2. Add smooth blueberries along with water into sauce pan and then add the other ¾ cup whole blueberries.
  3. Bring to low simmer and add chia seeds. Let simmer for about 5 minutes then set aside.
  4. Go through similar process with strawberries. Add 1 cup strawberries into food processor along with 2 tbs agave and blend until smooth.
  5. Add blended strawberries and water to small saucepan and bring to simmer.
  6. While blended strawberries are coming to a simmer, add other cup of strawberries to food processor and pulse for 10 seconds. Add coarsely chopped strawberries to the sauce pan.
  7. Once simmering, add chia seeds and let simmer for about 5 minutes. Set aside as well.
  8. Turn waffle iron on to heat up.
  9. Combine flour, sugar, baking powder, lemon zest, and ground flax in a medium mixing bowl and combine well.
  10. In another bowl combine melted coconut oil, vinegar, strawberry compote, and ⅓ cups of milk. (reserving 2 tbs of milk still)
  11. Add wet to dry mixture and stir a little. Do not worry about fully incorporating, just combine enough that dry is now wet. If your mixture is really thick, add the 2 tbs of milk once tbs at a time.
  12. Scoop some waffle batter onto waffle iron and cook per you waffle maker. You can either get 2 large waffles or 4 small ones out of this recipe.
  13. While waffles are cooking, add the coconut whip ingredients to medium mixing bowl. Use a hand mixer on medium speed to fluff the coconut cream into thick peaks that resemble whipped cream, about 7 minutes.
  14. Once waffles are done, top with strawberry and blueberry compote. Add coconut whip if desired as well.
