Spicy Dirty Quinoa

Ingredients
  • 1½ cups cooked quinoa (I cook it with veggie broth instead of water)
  • 1 yellow onion, diced
  • 1 green pepper, diced
  • 1½ cups vegan beefy crumbles
  • 1 tbs coconut oil
  • ½ tsp cajun seasoning ⅛ tsp red pepper
  • ½ tsp salt
Instructions
  1. There are two ways to begin this dish. 1) cook your quinoa with the diced onion in a rice cooker 2) boil rice according to directions
  2. Add coconut oil in skillet, then add bell pepper (if chose 2nd option at the beginning add onions as well). Sautee for 5 minutes.
  3. Add vegan beefy crumbles. Saute for another 5 minutes
  4. Next, add your quinoa, cajun seasonings, salt, and red pepper. Stir well. Taste, add more seasonings per taste.
