Catalan Tomato Bread

Ingredients
  • 1 baguette
  • 2 medium tomatoes
  • 2 cloves garlic
  • 2-4 tbs olive oil
  • salt & pepper
Instructions
  1. Slice baguette through the middle, sandwich style, then cut it in half.
  2. Toast in oven until mostly crunchy.
  3. While bread is toasting, puree tomatoes and garlic in food processor until chunky paste forms. Alternatively, you can also rub the tomatoes on a greater for the same effect. If you choose this method, you will want to mince your garlic separately and add it to the grated tomatoes.
  4. Once bread is toasted, generously spoon tomato puree onto crusty bread. Top with salt and pepper. Generously drizzle olive oil on top. Eat immediately.
