Summery Olive Tapenade on Cool Cucumber Slices

Ingredients
  • 1 large cucumber
  • ½ cup kalamata olives
  • ½ medium white onion
  • 3 tbs capers
  • 2 fresh garlic cloves, minced
Instructions
  1. Start by chopping olives and onion.
  2. Combine olives, onions, capers, and garlic in a small mixing bowl, Stir until combined.
  3. Slice cucumbers about ¼-1/2 inch thick, depending on personal preference. At this point you can chill all ingredients until cold or continue on at room temperature.
  4. Top each cucumber slice with a healthy spoonful of tapenade. Eat immediately.
