Sweet and Savory Bean Salad

Serves: 5-6 servings
- Dry:
- 1 cup chopped cashews
- 2 cans rinsed and drained chickpeas
- 1 12oz. bag frozen broccoli or 3-4 cups fresh
- ⅓ cup diced yellow onion
- ½ cup diced celery
- 1 cup sliced seedless red grapes
- Wet:
- ¾ cup vegenaise
- 3 tbs red wine vinegar
- 3 tbs agave
- ½ tsp salt
- Juice from 1 small lemon
- Add all "dry" ingredients in a large bowl.
- Add all wet ingredients in a separate bowl and mix until fully combined.
- Pour wet ingredients over "dry' and stir until everything is evenly coated.
- Let sit for at least 1 hour before eating.
