Sweet and Savory Bean Salad

Ingredients
  • Dry:
  • 1 cup chopped cashews
  • 2 cans rinsed and drained chickpeas
  • 1 12oz. bag frozen broccoli or 3-4 cups fresh
  • ⅓ cup diced yellow onion
  • ½ cup diced celery
  • 1 cup sliced seedless red grapes
  • Wet:
  • ¾ cup vegenaise
  • 3 tbs red wine vinegar
  • 3 tbs agave
  • ½ tsp salt
  • Juice from 1 small lemon
Instructions
  1. Add all "dry" ingredients in a large bowl.
  2. Add all wet ingredients in a separate bowl and mix until fully combined.
  3. Pour wet ingredients over "dry' and stir until everything is evenly coated.
  4. Let sit for at least 1 hour before eating.
