I’m a big fan of mimosas. In general, I prefer the classic champagne and orange juice. I try variations from time to time, but I always go back to the basic on this recipe. Until now…
I wanted a fall drink that wasn’t loaded with liquor or syrupy sweet. I recently saw one of those cool videos for how-to recipe making. This one was for a caramel apple mimosa, but it involved sticky caramel and liquor. I usually have a mimosa on Sunday so liquor is a no go, I do not need anything that hard the day before Manic Monday. The recipe video did inspire me though! I knew i wanted a spiced mimosa! I gave it some thought and decided I wanted some ginger added too. I woke up this morning and got cracking in the kitchen and by the time my husband woke up I had mulled cider simmering on the stove. An hour later and we were clinking our glasses to one amazing fall drink.
Spicy from the allspice, cinnamon, nutmeg, and ginger, sweet from the apple juice and maple, perfectly bubbly from the champagne-this is a simple fall beverage that takes very little preparation for a whole lot of flavor. I ended up making another batch of the cider just so we could sip on it later. So tasty!

- 3 cups apple juice
- 1 tsp cinnamon
- ⅛ tsp nutmeg
- ⅛ tsp all spice
- 2 tbs maple syrup
- 2 tbs minced ginger
- 1 bottle champagne
- pour all ingredients except champagne into a small sauce pan on medium heat.
- Bring to a soil, reduce to simmer. Simmer 10 minutes,
- Allow to cool to room temperature
- Pour the apple cider mixture through a fine strainer to filter out the ginger chunks.
- Pop the champagne, pour into glass, pour apple cider mixture on top to taste.
- Serve and enjoy!
