If you like Pina Coladas…and getting caught in the rain…doo dah dah. If you like making love at midnight….doo daah doo. Oh, hi there. Don’t mind me, just reminiscing over the FAN-freaking-TASTIC Pina Coladas I whipped up this past weekend.
I was talking with a couple friends at work and we were discussing the best way to go about making one of these bad boys. I heard the addition of vanilla ice cream, a nice touch but one I deem unnecessary, and then something about a pre-made mix. I stopped in my tracks and immediately stated I would come up with the exact measurements for mine and post it to share with the world. Say no to pre-made mixes! That should be your new motto! I find it is much MUCH tastier to make your own. I get it, you want a drink because you are trying to relax, so you don’t want to spend all day making said drink. I got your back! Just buy the ingredients beforehand, the perishable items are frozen, so you can store all of it for your time of need.
Another wonderful reason to make your own and avoid evil (yeah, I said it) pre-made drink mixes is the health benefits. You can bet that whatever concoction you buy will be loaded with food dyes, high fructose corn syrup, and a ton of words you can’t pronounce. Once again, I have your back (I’m on a roll today). This mix is made with 100% legible ingredients AND there are only 6 of them!
If you decide you want a virgin drink we could probably call this a fancy smoothie….I, for one, never pass up an excuse to put alcohol in anything. In fact, I added way more rum than the recipe I present to you today calls for…Obviously, add more or less to your preference.
So, have I convinced you yet? Well, let me just describe this drink. Coconut cream and banana render this Pina Colada a creamy, smooth texture while the pineapple and agave give it the perfect flavor and just the right amount of sweetness. Coconut water gives added electrolytes and freshens up the drink so it isn’t too heavy. The rum, of course, cuts in for a nice relaxing feel and a wonderful finish. It is heaven in a glass. Plus, it is pretty damn good for you! Bonus!!

- 2½ cups frozen pineapple chunks
- 1 frozen banana, cut into chunks
- ¼ cup coconut cream**
- ½ cup coconut water
- 2 tbs agave
- 4 shots of white rum
- Place all ingredients in blender.
- Blend until mixture is thick and creamy.
- If mixture is too thick, add a bit more coconut water to it to thin out.
- If mixture is too thin, add a few ice cubes.
- **Coconut cream is found in the top of a full fat can of coconut milk. Do not shake the can, remove lid. The top part will be thick and creamy and the bottom part will be milky. Scoop the coconut cream out of the can and use the coconut milk in another dish later. Also, Trader Joe's sells cans of just coconut cream.**
This is the virgin version. Kidding actually, but the glass makes it look like a smoothie, no?
