I know what you are thinking….this rice looks like any other brown rice. I am here to tell you that your are very mistaken. Even my husband picked up his plate, took a look at the rice, and asked if there was a sauce to pour on top of it. I smiled and told him to give it a bite first. He proceeded to sit down and took a forkful. He immediately agreed this rice needed no help whatsoever in the flavor department. It ended up being his favorite part of the meal.
A lot of families make brown rice as a cheap and healthy way to fill up as family on a budget. We certainly do in our household anyways. However, while I appreciate the filling qualities of rice, I often get bored of its flavor. In the past, my favorite way to make rice was in a stir fry, but this has now taken its place. My Tasty Rice is cheezy and oniony and full of flavor. It is loaded with fiber and other vitamins so it makes the perfect hearty side. I paired it with barbecue beans and a TON of broccoli. So go ahead and surprise your family with this spiced up version of a rice side!

- 1¾ cup brown rice
- 3 cups vegetable broth (or water with vegetable bouillon cubes)
- 1 medium red onion, finely chopped
- 3 heaping tbs nutritional yeast
- ½ tsp salt
- ¼ tsp pepper
- 1 tbs soy milk
- In a rice cooker, add vegetable broth, rice, and diced onion. Cook according to your rice cooker directions.
- Once rice is cooked, add nutritional yeast, salt, pepper, and soy milk. Stir well.
- Serve immediately.
