Happy 4th of July everyone! I know I’m a couple of days early but I figured it made more sense to post now so you have a chance to make this recipe for breakfast by then! It is delicious! It is also pretty darn good for you too! Despite the seemingly long recipe and ingredient list, it really is pretty quick and easy. The berry compotes can be made in advance too which would save you a bit of time. For the waffles you just mix and throw the batter in your waffle iron and then the coconut whip can be beaten into fluffy peaks in 5-7 minutes.
Ok, let’s go ahead and address the elephant in the room….the whipped cream in my photos. It is not what you would call whipped. This, my friends, is simply what happens when you do not beat it long enough. There is not enough air in my coconut cream. Why did I make subpar coconut whip? Well, I was pressed for time as I was creating 6 different blog posts in one day. Anyone who has any experience in baking or blogging knows that is quite the undertaking. Luckily, I was successful in my endeavor and now I have some wonderful posts coming your way in the next week!
Unfortunately these photos did not turn out quite as well as I would have liked on this one, as my whip is incredibly runny, BUT, let me just say that it still tastes DELICIOUS! I debated about whether or not I was going to post this recipe due to the whip, but I simply cannot keep this tasty breakfast from you guys due to a mere kitchen error. Make these waffles, and you will know what I mean.
These strawberry waffles are topped with blueberry and strawberry compote and then coconut whipped cream. The end result is a sinfully delicious breakfast that tastes like it should be categorized as dessert. The best part? This recipe is loaded with flax and chia seeds for a super food breakfast of champions. So go ahead, tell your guests that not only is this the tastiest 4th of July treat they are going to have all day, but probably also the healthiest.

- Blueberry Compote:
- 1¾ cup blueberries
- 1 tbs agave
- 1 tbs chia seeds
- ¼ cup water
- Strawberry Compote:
- 2 cups strawberries
- 2 tbs agave
- 1 tbs chia seeds
- ¼ cups + 2 tbs water
- Coconut Whip:
- About 1 cup CHILLED coconut cream (the top part of an unshaken can of full fat coconut whip)
- ¼ cup sugar
- 1 tsp vanilla extract
- Waffles:
- ¾ cup whole wheat pastry flour or oat flour (other flours would prob work too, let me know if you use a different type in the comments)
- ¼ cup cane sugar
- 1 tsp baking powder
- 1 tbs ground flax
- 1 tsp lemon zest
- 1 tbs coconut oil
- 1 tsp apple cider vinegar
- ⅓ cup strawberry compote
- ⅓ cup + 2 tbs dairy free milk (I used cashew milk)
- Start by placing a small sauce pan on medium heat. Add 1 cup blueberries to food processor along with 1 tbs agave and blend until mostly smooth.
- Add smooth blueberries along with water into sauce pan and then add the other ¾ cup whole blueberries.
- Bring to low simmer and add chia seeds. Let simmer for about 5 minutes then set aside.
- Go through similar process with strawberries. Add 1 cup strawberries into food processor along with 2 tbs agave and blend until smooth.
- Add blended strawberries and water to small saucepan and bring to simmer.
- While blended strawberries are coming to a simmer, add other cup of strawberries to food processor and pulse for 10 seconds. Add coarsely chopped strawberries to the sauce pan.
- Once simmering, add chia seeds and let simmer for about 5 minutes. Set aside as well.
- Turn waffle iron on to heat up.
- Combine flour, sugar, baking powder, lemon zest, and ground flax in a medium mixing bowl and combine well.
- In another bowl combine melted coconut oil, vinegar, strawberry compote, and ⅓ cups of milk. (reserving 2 tbs of milk still)
- Add wet to dry mixture and stir a little. Do not worry about fully incorporating, just combine enough that dry is now wet. If your mixture is really thick, add the 2 tbs of milk once tbs at a time.
- Scoop some waffle batter onto waffle iron and cook per you waffle maker. You can either get 2 large waffles or 4 small ones out of this recipe.
- While waffles are cooking, add the coconut whip ingredients to medium mixing bowl. Use a hand mixer on medium speed to fluff the coconut cream into thick peaks that resemble whipped cream, about 7 minutes.
- Once waffles are done, top with strawberry and blueberry compote. Add coconut whip if desired as well.
