I know hummus is not the new kid on the block anymore. I know it is the stereotypical dip that people assume vegans eat every day. There are good reasons for the reputation hummus holds though. For one, it is delicious. Two, it is healthy. Three, it is versatile. Four, the texture is second to none. Five, pretty much anyone can make it. Six, it keeps in the fridge for a good while so you can make it in large batches and eat on it all week. I could probably keep going all day, but I think this covers the main reasons.
So when I share this particular hummus recipe today I want you to think of exciting ways to use it. Break away from the hummus mold! Yes, it is good on pita bread by itself. However, this particular flavor holds so much promise for use in other recipes. You could use it in a casserole, add it to a pasta dish, use it as pizza sauce…the options are endless. I really want to hear what you end up using it for!
This Smoky Chipotle Hummus has just a few additions from the standard hummus I usually make, but these additions render it a whole new depth of flavor. The liquid smoke brings in a nice saltiness while the chipotles add warmth and a satisfying kick. I like that this hummus has an almost barbecue-y flavor profile opposed to my classic Mediterranean or Indian versions I generally create. It brings to mind endless creativity in the kitchen, which is half the fun!

- 1½ cups chickpeas, cooked
- 2 chipotle peppers in adobo sauce (more if you want really spicy)
- 1 tsp liquid smoke
- 1 tbs tahini
- ½ cup oil (I usually use olive oil, this time I used sunflower)
- ½ tsp salt
- 1 clove garlic
- Combine all ingredients in a food processor and blend until smooth. I left mine pretty chunky this time as I wanted it to have more texture. if you want to smooth it out more, add water 1 tbs at a time until desired consistency is reached.

I LOVE a good, smoky hummus! Since I don’t eat meat, hummus is one of the things that my fiance and I totally agree on when it comes to meal time. Can’t wait to make this for a summer happy hour snack 🙂

Happy Hour snacks are a must, yes? This one would certainly be a good one for that, especially if you are a beer drinker. Something about the flavor notes compliment so well with a cold glass!
