Ah, summer is in full swing and the temperatures are kicking! The thought of turning my oven or stove on makes me cringe at this point in the year. Therefore, I think cooool. Meaning, what can I whip up that requires no heat? After a little rummaging around in my fridge I decided to make this summery recipe. It turned out pretty much amazing, and did not last as long as I had hoped. In this case, that is not such a bad thing. I went into this batch thinking I would have slices all week….which turned into 2 servings and done. When the reason is because they were so tasty, though, I can let the fast disappearance slide.
So what am I talking about?
Light, salty kalamata olive tapenade spooned over thickly sliced cucumber coins. Beat the heat and hydrate while doing so, that’s my motto (is it though?-for the purpose of this post…yes, yes it is).
Now, you may be wondering where I have been off to (if not tough shit). The answer is I am writing to you in my home, a home that I own. Well, if you want to get technical the bank owns it. As an adult I have learned “buying” a home means you pay the bank each month instead of a land lord. ADULTING. So, I have been moving boxes and painting and all the other fun tasks that come with moving. I have the kitchen set up for the most part now so I expect to start churning out some home grown Jenn Harmon recipes soon. Speaking of kitchen…this bad boy is off the chain<–yeah I said it. With all the new counter space and fun appliances to play with, I can only imagine what is coming your way. Really, though, I can only imagine it, because your aren’t a mind reader (and if you are get the f*** out of my head).

- 1 large cucumber
- ½ cup kalamata olives
- ½ medium white onion
- 3 tbs capers
- 2 fresh garlic cloves, minced
- Start by chopping olives and onion.
- Combine olives, onions, capers, and garlic in a small mixing bowl, Stir until combined.
- Slice cucumbers about ¼-1/2 inch thick, depending on personal preference. At this point you can chill all ingredients until cold or continue on at room temperature.
- Top each cucumber slice with a healthy spoonful of tapenade. Eat immediately.
