Tangy Asian Pasta Salad

Ingredients
  • Sauce:
  • 4 tbs soy sauce or tamari
  • 1 tsb peanut butter
  • 2 cloves garlic
  • 1 garlic clove sized chunk of fresh ginger
  • 1 tbs toasted sesame oil
  • 1 tbs agave
  • juice ½ lemon
  • 1 tbs tahini
  • ¼ cup silken tofu (optional)
  • 8 servings of pasts (about one package)
  • 1 14 oz bag frozen veggies, Asian blend
Instructions
  1. Cook pasta according to directions.
  2. Add sauce ingredients to a blender (I used my bullet for this one). Blend until combined and smooth.
  3. Once pasta is cooked, drain and place into a large mixing bowl. Add frozen veggies and let hot pasta thaw out the veggies.
  4. Pour the sauce onto the pasta and veggies. Toss well. Refrigerate at least an hour, but overnight is best.
  5. Toss before serving. Enjoy!
