Before I get to today’s recipe I want to share a little something about my personal life that is heavy on my mind. I, Jennifer Harmon, am once again puppy crazy. Now, I say puppy crazy just because in order for me to get a new dog it needs to be a baby so that it can seamlessly adjust to my small kitty, Mary Jane, and the current pup of the house, Zeus. Of course, I don’t want just any dog; I want a liver spotted, deaf, female Dalmatian rescue. Try to say that three times fast!
Did you try to say it? I did, it wasn’t actually as difficult as I thought. Anyways, I found the pup. She is a mere 7 hours away and just beyond my reach. Beyond my reach by miles, you ask? Nope, she is beyond my reach for a number of reasons. Allow me to explain. 1) Ken and I currently reside in a house that is less that 1000 square feet. 2) We are also about to start the whole house hunting thing so we jumped into heavy duty frugal mode and puppies need checkups 3) Zeus is already one expensive ass dog. He needs daily medicine and goes to the vet for some odd reason or another every month or so. *Disclaimer: I am in no way, shape, or form complaining about spending money on the health and care of my pets, just pointing out that he costs a nice chunk of money (because can you really put a price on family? Not in mine!) 4) This is probably the biggest issue; Ken is not 100% on board for the previous reasons 1-3.
Now, for the sake of my sanity, let us continue this game and list the positives of adopting said pup. 1) Since we are house hunting, we will likely find a large home by the time little pup turns into big pup. 2) Our current home has a sizable backyard regardless 3) I would be using less money on clothes, booze, etc and instead spending it on new pup which would be better for my health and the minimalistic home I’ve always dreamt of. 4) By adopting a deaf Dalmatian we will be offering this pup the ideal home for her. Not only have I done extensive research on training a deaf pooch but we have lots of experience with her breed as well. Plus, deaf dogs tend to do better with a companion dog that can be her “ears”.

Rant aside, I suppose it is time to share this recipe I prepared for you today. This crazy Edamame Wasabi Bean Dip is Asian inspired and packed with protein. It has a little heat due to the wasabi powder (found here) but freshens up thanks to a little ginger. The white beans keep the dip nice and creamy and renders it a comfort food feel. I mainly ate it this time with crackers but the options are endless for what you can use it for. I recommend as a spread on Asian themed wraps, or add a little milk to thin it out and toss it with pasta. It is amazing! - 1 can drained white beans (about 1 heaping cup)
- 1 12 oz. bag frozen edamame, thawed
- 2 cloves of garlic
- 1 tsp sesame oil
- ½-1 tsp wasabi powder
- ½ tsp ginger powder
- ½ cup olive oil
- ¼ cup water
- salt to taste
- Add all ingredients except water, salt, and ½ tsp of wasabi powder to a food processor and blend until smooth.
- Mixture will be thick. Slowly add in the ¼ cup water until you reach desired consistency.
- Taste, add salt to taste. Add the rest of the wasabi powder if you think it needs more. I prefer a lot of wasabi but Ken prefers less.
- Blend again until flavors are incorporated. You can either eat immediately, chill it, or even put n oven safe dish and heat for a few minutes to serve warm!
