First of all I would like to just say that I did not plan on a drink (delicious though it may be) being my first post on this blog. Life happens though, and then you blog about it. This is precisely why I shook up this colorful summertime treat…LIFE!
I am currently in the midst of planning my own wedding. While I highly enjoy it and love being immersed in all the activities leading up to the big day; we had a curve ball thrown at us. I wanted to get married in my hometown that is none other than Charleston, SC. Not only is the Holy City popular on any old day; but me and my fiance chose the BUSIEST weekend the city ever sees. The Cooper River Bridge Run. Now, this is a fantastic event and I truly enjoy the bridge run, but how did I not check on this “minute” detail?!? What this means for those of you foreign to my hometown is that every hotel from Charleston to Orangeburg is booked! Kenny (the fiance) and I have been on the phone for the past 3 hours calling every guest and hotel trying to squeeze those that need rooms in somewhere. We are done now; and I must say….WE PREVAILED! I think all will be well. If not, we are the kind of people that accept what life throws at you and let it roll right off our shoulders.
I Digress.
After all the phone calls I decided I had earned a drink. I didn’t want any old drink though, I wanted a light happy drink to brighten my spirits and ease any lingering anxiety. So I chose this little gem. Freshly picked mint, grated ginger, and tart lemons pack a punch in this mojito…with a twist. It not only tastes like a bright summer day, but smells both exotic and relaxing. Grab the few ingredients and shake one of these babies up yourself! You won’t regret it!
What you will need:
Bacardi rum (I use a speed pourer and count to 5. A shot will do…or two if you’re a lush)
1/2 small lemon, quartered. (I recommend cutting off the ends of the lemon. Cut lemon in 1/2. Then quarter each 1/2.)
3 fresh mint leaves
1/4 tsp fresh grated ginger
2 tbs water
6-8 ice cubes
1-2 tbs agave nectar
Drink shaker (2 cups that fit into each other will work just fine)
How to Make:
Grate ginger into drink shaker. Tear mint leaves and add to shaker. Add the water. Muddle mint and ginger if you have a muddler (basically a tool that mashes the leaves and releases the flavor more…not 100% necessary). Add Bacardi rum and agave. The agave is more to taste. I actually prefer 1 tbs but if you want it a bit sweeter add 2. Add the ice cubes and shake the drink for 20 seconds…1 thousand, 2 thousand, 3 thousand…4…ok, you get it. Next, squeeze the 1/4 lemon that you quartered into the mixture and dump the lemon rinds in as well. Shake the whole drink for 10 more seconds. DONE! Pour that bad boy into a glass and slap a straw in it and take a nice big sip. Savor the spicy ginger mixed with the minty freshness and the zesty lemon. Sit back, and let all other thoughts go. Life happens…and then you drink. Or at least that’s my motto…..ENJOY!
