Sometimes you just need a nice, warm bowl of soup with lots of rich broth. I made just such soup when the craving hit me. I really focused on the broth in this one and much less on the other ingredients. I wanted it to be a classic soup, like the go-to can of veggie soup I always keep in my pantry for an unexpected cold. I also wanted to keep it simple, crock pots are Irving Naxon’s gift to all man kind. Seriously, I looked it up, he filed for the patent in 1936. Shout out to Naxon! *fist pumps*
Per usual, I rummaged through my pantry and pulled ingredients from there and got my ol noggin (aka-my brain) working and created this masterpiece. Well, I don’t know that I’d call it a masterpiece, per say-BUT-it really hit the spot and I plan on making another batch to freeze for my unexpected colds. See, told you it was good 🙂
Soft sweet potatoes, corn, and white beans add texture to this soup while letting the broth steal the show. Each sip is better than the last and certainly good to the very last drop. I found it tasted best on the second day, funny how some foods do (like spaghetti sauce). It’s a simple and inexpensive recipe too, perfect for those of us on a tight budget *raises hand*

- 2 sweet potatoes
- 1 red onion
- 1 cup dry white beans
- 1 cup corn kernels
- 1 1/1 tbs salt
- 1 tsp pepper
- 1 tsp cocoa powder
- ½ cup nutritional yeast
- 1 tbs black strap molasses
- 1 tbs maple syrup
- 1 tbs chili powder
- 2 cloves of garlic
- 64 oz veggie broth (2 containers of broth)
- 1 6 oz can tomato paste
- Soak beans overnight and prepare per instructions on bag.
- Cube sweet potatoes and combine all other ingredients, including potatoes in crock pot.
- Cook on high for 6-7 hours or until all veggies are completely soft. Add the white beans when they are fully cooked and allow to merry with the rest of the soup.
- Serve and enjoy all week!
